I'm of the opinion that as long as you are doing gestures daily (10-30 min) you are doing great. They're not all going to look good, in fact most of them will look like crap haha. That's just the nature of trying to cram a drawing in such a short amount of time. Move on to the 1 minute ones, I don't think the time interval is too important as far as the exercise goes. The variation should help avoid burnout as well.
I like to imagine the torso as 2 separate boxes joined by a flexible tube. How those two boxes are angled and how they interact with one another really helps sell the pose. Might be hard to depict that with just 30 seconds though haha. All in all I don't really see an issue with your profile or bending over poses - you're doing great.
